Absolutely love it this time of the year with all of the fresh ingredients — Highly recommend you fire up the grill and give this one a try! FULL RECIPE ⬇️ INGREDIENTS (~4 servings) - ~2 lbs lamb chops - Extra virgin olive oil - Salt Pepper Garlic Rub - Jasmine rice cooked in bone broth (optional) Lemon Dill Chimichurri (Combine all ingredients) - 1 bunch of flat parsley finely chopped - 1 bunch of fresh dill finely chopped - 1 medium shallot finely diced - 3-4 tbsp fresh minced garlic - Zest of 1/2 a lemon - Juice of a lemon - Seasonings: salt, pepper, crushed red peppers flakes all to taste. - 1/4 cup red wine vinegar - 3/4 cup extra virgin olive oil - 1-2 tbsp honey Creamy Cucumber Salad - Dressing: 2/3 cup light sour cream, 2 tbsp apple cider vinegar, 1 tbsp honey, salt, pepper, garlic powder to taste. - 1 english cucumber (skinned & thinly sliced) - 1/2 a red onion thinly sliced - Topping: crumbled feta Note: Measurements are estimated, adjust ingredients to your liking. DIRECTIONS 1. Prep the chimicurri and the cucumber salad. Place both in the fridge until ready to serve. 2. Pat the lamb chops dry, coat in olive oil and season on all sides. 3. Get the grill fired up to high heat. Grill the lamb chops for ~3-4 min per side or until your preferred internal temp. I pulled mine off around ~140°F. 4.
