are you able to parent the latice to a bone and have it rotate the same way?

For my original pikmin model, I had the bones control the uv data to move the pupil which worked great. Later on I remade the model with better topology and proper scale (from 6 feet tall to ~1in) only to find out my uv bone setup falls apart at small scale. I might have to see if I can implement something along these lines

Never knew you could do lattice deform selected! Way faster than manually covering the object with a spawned lattice
