Chicken Souvlaki Pita Wrap ↓ Recipe ↓ Ingredients: ~9 boneless chicken thighs 1 cup Greek yogurt (preferably full fat, but whatever you want) Generous drizzle of olive oil  ~2 tsp salt 1 tsp Pepper 2 tsp Oregano Juice of ½ lemon 4-5 garlic cloves, crushed ½ tsp paprika Tzatziki ½ large cucumber, grated  2 cups Greek yogurt 3 garlic cloves, finely grated or crushed 1½ tbsp red wine vinegar Squeeze of lemon juice 1 tbsp fresh dill, finely chopped 1 tsp salt 3 tbsp olive oil Greek-style tomato onion salad ½-1 a large red onion, sliced  3 medium to large tomatoes, sliced 1/3 cup kalamata olives, roughly sliced Generous splash red wine vinegar and Olive oil Generous pinch of salt & dried Oregano Squeeze of lemon juice To assemble Pita bread (I used @Joshua weissman's pita recipe — go check it out if you want to make your own) Feta cheese Optional parsley Instructions: 1. Marinate chicken: Mix chicken with yogurt, olive oil, salt, pepper, oregano, lime, garlic, and paprika. Marinate 1-2 hours. 2. Make tzatziki: Salt grated cucumber, let it sit, then squeeze out all moisture. Mix with yogurt, garlic, vinegar, lemon, dill, olive oil, and salt. Adjust to taste. 3. Make salad: Mix onion, tomatoes, and olives with vinegar, olive oil, salt, oregano, and lemon. Set aside. 4. Skewer and cook: Thread onto skewers (about 6). Grill, pan fry, or oven cook until nicely charred and cooked through (155-160°F internal). Throw a halved lemon on the grill as well to caramelize and bring out its sweetness. 5. Optional chicken skin (elevates it): Lay chicken skin in a cold pan with a little water and weight on top. Cook on low until the water evaporates and the fat renders, leaving the skin crispy. Flip if needed. Optionally brush the rendered fat onto the chicken while cooking. 6. Warm pitas until soft and pliable (steaming works best). 7. Assemble: Add 1-2 skewers to the pita, top with tzatziki, tomato onion salad, crispy chicken skin, feta, and optional parsley.
