Beef with Prunes Tagine Ingredients: -1lb of bone-in meat (beef or lamb) -1 onion chopped -2 cinnamon sticks -1 Tbs Ras el Hanout - 1 tsp Turmeric -1 Tbs ginger -Saffron water (1 pinch of saffron threads +warm water) -Salt and pepper to taste -Olive Oil Toppings: -Toasted Sesame seeds -blanched almonds -5-8 dried prunes -cinnamon stick -1 Tbs honey 1. Heat olive oil on medium-high heat on the stove (in the tagine) 2. Add the chopped onions in the bottom of the tagine. 3. Add the 1lb of meat on top of the onions. 4. Add the cinnamon sticks, ras el hanout, turmeric, ginger, saffron water, salt and pepper on top of the meat. 5. Close the tagine and let it cook for 15 min. 6. Open the tagine and then flip the meat to get the other side. 7. Close the tagine again, turn the stove down to medium and cook for about 1.5-2 hours. For the prunes: 1. Put the prunes in a small pot and cover with water. 2. Let the prunes come to a boil, until about half of the water is gone. 3. Add in the cinnamon and honey. 4. Cook until the prune’s sauce gets thick, like a honey consistency. Putting it all together: 1. The tagine will be done when the beef is falling off of the bone. 2. Arrange the blanched almonds on top of the meat. 3. Arrange the prunes on top of the meat. 4. Take the extra sauce from the prunes and spread all over the meat. 5. Put sesame seeds on top of a few of the prunes.. this is for decoration! Your tagine is done!
