I’ve been making these cucumber rolls on repeat lately😍 Save this recipe for later☺️🫶🏻 Crispy tofu cucumber rolls Ingredients: • Cucumber - 1 large • Vegan cream cheese - 3 tbsp (45 g) • Cooked sushi rice - 1/3 cup (60 g) • Avocado - 1/4 avocado, sliced • Shredded carrot - 1/4 cup (25 g) • Firm tofu - 2 oz (60 g) • Soy sauce - 1 tbsp • Nori - 1/2 sheet • All-purpose flour - 2 tbsp (15 g) • Water - as needed • Panko breadcrumbs - 1/4 cup (12 g) • Oil - for frying How to make: 1. Cut the tofu into thin strips and marinate in soy sauce for 15 minutes. 2. Wrap each strip with nori. 3. Mix the flour with enough water to make a thick batter. 4. Dip the tofu into the batter, coat with panko breadcrumbs, and fry until golden and crispy. 5. Using a vegetable peeler, slice the cucumber into thin ribbons. Lay the ribbons slightly overlapping on a sushi mat to form one large sheet. 6. Spread 2 tbsp of vegan cream cheese over the cucumber sheet. 7. Add the sushi rice, avocado, shredded carrot, and crispy tofu. 8. Spread the remaining 1 tbsp of cream cheese along the far edge of the cucumber sheet. 9. Roll tightly, slice, and serve.
