Strain the tea and stir in the sugar. Add 3 cups of water. By diluting the tea this way, you cool it down faster and can add the ginger bug sooner, which speeds up preparation. Burp the bottles every day or two to release carbon dioxide and prevent explosions — just open and close the bottle quickly. After about 3-7 days, your drink is ready. You know it’s ready when you notice a thin layer of foam at the top and the drink reaches a level of carbonation to your liking.  Store the soda in the fridge and it typically lasts 2 to 4 weeks. The carbonation may continue to build slowly, so always open the bottle carefully. The flavor may become slightly more tangy over time, but it remains safe to drink as long as it smells pleasant and shows no signs of spoilage. Enjoy!
