@kristin.valen: We’ve been told that cooking from scratch is expensive, difficult, and time-consuming.. But is it really? A large pot of soup, stew, or meat sauce takes only minutes to prepare. Make a big batch, freeze portions, and you’ll have several nutritious meals ready for busy days. When you start looking closely at the ingredient lists on many foods marketed to children, you’ll often find dozens of ingredients that most people would never use in their own kitchens. Yet somehow we’ve been convinced that these products are the easiest and most affordable option. The reality is that simple, whole-food ingredients bought in larger quantities and prepared at home can provide more nutrition and more meals for less money than most UP-products. At the same time, we are witnessing a troubling global trend. UNICEF has warned that for the first time in history, more children and adolescents worldwide are living with obesity than with underweight, and many children are consuming plenty of calories while still missing essential nutrients needed for healthy growth and development. We are also seeing rising rates of chronic health conditions, metabolic dysfunction, and mental health challenges among children. These issues are complex, but the food children eat every day is undoubtedly part of the conversation. This is exactly why we decided to start our non-profit organization, One Health Shift. Not to judge parents. Not to create fear. And not to tell families that they need to be perfect. We started the organization because we believe families deserve better information, practical guidance, and real support. We want to help parents rediscover simple, nourishing food, understand where their food comes from, and feel confident preparing meals from real ingredients. We want to make healthy living feel achievable, not overwhelming. Because every child deserves the opportunity to grow up with food that truly nourishes them. Our mission is simple: To help families move closer to nature, closer to real food, and closer to the knowledge that empowers them to make informed choices for their children’s future. Follow along.
