for those who want an actual in depth explanation beyond "using the engine to brake": Activating jake brakes uses the compression stroke of the engine as a spring. The stroke order and everything is normal except at the very end of the compression stroke the exhaust valves open and release the fuel/air directly out of the exhaust leaving nothing to ignite, meaning there is ONLY compression and no ignition. Thats why it is so loud is because it is expelling the energy in the form of compressed gas with the same timing of the normal engine sound, which is why is sounds just like the engine normally. And the shifting is interesting because in this braking mode the higher the gear the MORE torque meaning more braking force, so as he downshifts its like you are letting off the brakes as you slow down.
