George has said that everything stated outside of the books is either semi canon (until verified or confirmed) or its own canon. You can’t mix and match. It’s either one or the other. Whoever uses show canon to debate someone using book canon is instantly invalidated.

I like to imagine a lot of the scenes we didn’t see in the books but saw in the show is cannon. For example, every scene with Littlefinger and Varys alone together

I would also argue it depends on the question. If it is a question based on the show I would personaly not look to the books. For example, the question of which fighters Jamie thinks can beat him in a fight since that is based on something he sais in the show that is not pressent in the books

If you accept a source you have to accept the entire source. And since the later half of game of thrones makes absolutely no sense, if you assume that the shows are cannon you also have to assume that the world of asoiaf is a nonsense world where literally anyone can do anything at any time for no reason and consequences only occasionally exist.
