When it gets to the finer crumbly bits a top tip: sprinkle in two small shots of ice cold water & kinda clump it a bit. Throw it back in the fridge/freezer to firm again whilst assembling the filling.

Once you discover how to actually zest a lemon you will not hate it anymore. Just turn things around - hold the lemon fixed in one hand and pull the zester from one tip to the other tip of the lemon and rotate the lemon after each pull. Much more control and easy to get 100% of the zest off of the lemon. 🍋
