After doing plyometric training, my knees hurt the next day especially when bending them. I also feel weak and lose strength and it takes around three days to recover. Is this normal?

Squat jumps or depth jumps aren’t considered plyos. Plyos are supposed to be an exercise that emphasises on reducing contact time. Land and take off right away. At least below 250ms ground contact time
