I love doing this more than anything!! We call it “brisket reveal “ and one of my kids always record it .. man nothing like that very first cut and bite !! And that’s an awesome looking Brisket right there !

People have to really understand. There is a difference between juices running from the fat cap and juices running through the meat. This brisket is PERFECT because it has the juices flowing out of the meat.

Sorry but as a national BBQ judge this would still be dry. You can tell because its god very little 'jiggle' to it and the top part of the flat side has no juice. If it were fresher you wouldn't be able to hold it that long. This wouldn't be in a top 10 brisket.
