@amanda__.please: Glazed Lemon Cake Bars 🍋 Ingredients: 110g butter, melted ¾ cup sugar 2 eggs Zest of 1 lemon 1 tbsp fresh lemon juice 1 tsp vanilla extract 1 tsp limoncello (optional) 1⅛ cups plain flour 1 tsp baking powder Pinch of salt Lemon Glaze: 1 cup icing sugar 2–3 tbsp lemon juice Method: 1. Preheat your oven to 180°C and line a 9x9-inch baking tin. 2. Whisk together the melted butter and sugar. 3. Add the eggs, lemon zest, lemon juice, vanilla and limoncello. Mix well. (It may look a little curdled from the lemon juice…that's completely normal!) 4. Add the flour, baking powder and salt, then mix until just combined. 5. Pour the batter into your prepared tin and spread evenly. 6. Bake for 20 minutes, or until a skewer inserted into the centre comes out clean. 7. While the bars are baking, make the glaze by stirring together the icing sugar and lemon juice until smooth. Add a little extra lemon juice if it's too thick, or a little more icing sugar if it's too runny. 8. Pour the glaze over the bars while they're still warm.
