In a bowl, mix the chopped vegetables with the ground beef/ lamb. Add all the spices and mix until well combined. Refrigerate the mixture for 40 minutes to let the flavors meld. Preheat the oven to 220°C (428°F) Shape the meat mixture onto skewers and place cherry tomatoes alongside. Bake in the oven for 30-35 minutes, flipping halfway through. 2. Prepare the Salad:  In a bowl, combine sliced red onion, chopped cilantro, sumac, lemon juice, salt, and olive oil and toss well. 3. Make the Mayo Sauce:  In a separate bowl, combine mayonnaise, Greek yogurt, garlic powder, parsley, sumac, and lemon juice. Mix until smooth. 4. Assemble:  Take flat bread of your choice. Spread a layer of the mayo sauce, place the kebabs, and add the onion salad and baked tomatoes on the side.
