Oat Pita Kebab Pocket (No Flour). Recipe ↓ The flavor was interesting, but I think the basic oat pita (just blended oats with water) works better overall. It’s easier to make, and the pita comes out lighter, so it’s easier to cut open and fill. Keep it soft and flexible (don’t overcook). 6. Mix all ranch sauce ingredients in a bowl until smooth. Adjust lemon and seasoning to taste. 7. Fill the flatbread with warm kebab meat, salad, tomato, feta, and red onion.  8. Drizzle with ranch sauce. 9.
