@4z_food: Dal Gosht with bottle gaurd & Baghara For Boiling the Dal Ingredients - ⅓ cup tuvar (toor) dal - ⅓ cup masoor dal - ⅓ cup moong dal - 4 tbsp chana dal - 1 tsp ginger-garlic paste - 1 tsp salt - 1 tsp turmeric powder - 1 tomato, chopped Method 1. Wash all the dals thoroughly. 2. Add the dals, ginger-garlic paste, salt, turmeric, and chopped tomato to a pressure cooker. 3. Add enough water to cover and pressure cook for 3–4 whistles. 4. Once cooled, mash the dal well and keep aside. For the Mutton Ingredients - 1 kg mutton - ¼ cup oil - Whole spices: - Cloves - Cumin seeds - Green cardamoms - Cinnamon stick - Bay leaf - 1 onion, sliced - 2 tbsp ginger-garlic paste - 1 tsp green chilli paste - 2 tsp coriander powder - 2 tsp red chilli powder - 1 tsp turmeric powder - ½ tsp cumin powder - ½ tsp garam masala - 3–4 pieces dry amchur - 2 tomatoes, chopped - Salt to taste - ½ kg dudhi (bottle gourd), cut into pieces - Chopped fresh coriander - Curry leaves - 3–4 green chillies Method 1. Heat oil in a pressure cooker. 2. Add the whole spices and sauté until fragrant. 3. Add the sliced onion and cook until the onion changes colour and becomes lightly golden. 4. Add the ginger-garlic paste and green chilli paste. Cook until the raw smell disappears. 5. Add coriander powder, red chilli powder, turmeric, cumin powder, garam masala, and salt. 6. Add the chopped tomatoes and cook until the masala changes colour and the oil begins to separate. 7. Add the mutton and cook until the meat changes colour. 8. Add enough water, close the lid, and pressure cook for 5–6 whistles or until the mutton is tender. 9. Add the  bottlegaurd ( dudhi) and pressure cook for 1 more whistle. 10. Open the cooker and add the prepared dal mixture. 11. Mix well and adjust the consistency if needed. 12. Add chopped coriander, curry leaves, and green chillies. 13. Simmer for a few minutes until everything is well combined. For the Tadka Ingredients - 2 tbsp ghee - 1 tbsp oil - 1 tsp cumin seeds - 1 tsp kasuri methi - 1 tbsp birista (fried onions) - 1 tsp red chilli powder Method 1. Heat the ghee and oil in a small pan. 2. Add cumin seeds and let them splutter. 3. Add kasuri methi and birista. 4. Stir in the red chilli powder and immediately switch off the heat. 5.
