“Pasta con le Sarde”, Sicily on a plate. One of those dishes that tells the story of Sicily better than a thousand words: sea, land, aromas, sweetness, savoriness, and tradition. First, I blanched the wild fennel and immediately cooled it in ice water to preserve its vibrant color and fresh aroma. In a pan, I gently sautéed finely chopped onion in extra virgin olive oil, then added a teaspoon of anchovy paste to build depth and savory flavor. Next came the chopped wild fennel, pine nuts, raisins that had been softened in water, saffron dissolved in a little water, and a spoonful of tomato paste. I let everything cook together for a few minutes before adding fresh sardines, cleaned and deboned, allowing them to simmer gently for about 7–8 minutes. The linguine were cooked in the fennel water: half the cooking time in the pot, then finished directly in the sauce, risotto-style, so the pasta could absorb every bit of flavor. To finish, I added a little more wild fennel and topped the dish with “muddica atturrata” Sicily’s famous “poor man’s cheese”: toasted breadcrumbs seasoned with olive oil and a pinch of salt. A humble dish in name only, yet incredibly rich in history, character, and flavor. This is the kind of cooking I love: simple, honest, and deeply rooted in tradition.
