@ds_sweet_way: The verdict is in: spinach and feta sourdough is officially a success 💚 I wasn’t sure if this experiment would work, but the crumb stayed soft and airy, the feta created little pockets of salty goodness throughout the loaf, and the flavor was even better than I hoped. Recipe: • 250g frozen spinach, thawed • 100g water • 100g active sourdough starter • 450g bread flour • I used smoked paprika, garlic powder & sharena sol (or your favorite spices) • About 300g feta cheese crumbs Mix spinach and water, and blend together with immersion blender. Mix in tarter, flour and spices. Let rest 30 minutes. Perform 3-4 sets of stretch and folds during the first part of the bulk fermentation 30-40 min apart. Add the feta during lamination or shaping. Shape, cold proof overnight, then bake at 450°F for 25 minutes covered and 15-20 minutes uncovered at 425°F.
