Fajita Chicken Flatbread 🌯 #fajita #chickenrecipes #flatbread #EasyRecipes #flatbreadrecipes  For the Dough: Ingredients * 1⅔ cups all-purpose flour (200g) * ¾ tsp salt * 2 tsp honey * 2 tsp olive oil * 1½ tbsp Greek yogurt * ~½ cup warm water (120ml, add gradually) Method 1. Mix flour and salt in a bowl. 2. Add honey, olive oil, and yogurt. 3. Gradually add warm water, mixing until a dough forms. 4. Knead for 5–7 minutes until smooth. 5. Cover and rest for 45–60 minutes. Chicken & Vegetable Filling Ingredients * 1 tbsp olive oil * 1.1 lb chicken thigh, sliced (500g) * 1 small onion, sliced (about ¾ cup) * ¾ cup red bell pepper, sliced * ¾ cup yellow bell pepper, sliced * ¾ cup spring onions, chopped * ¾ cup sweetcorn * 2 garlic cloves, minced * Chilli, chopped (optional) * 2 tbsp lemon juice * ½ cup shredded cheese Seasoning * 2 tsp ground cumin * 2 tsp smoked paprika * ½ tsp cayenne pepper * 1 tsp garlic powder * ½ tsp onion powder * Black pepper, to taste * 1 tbsp chicken bouillon * Juice of ½ lime (about 1 tbsp) Sauce * 1 tsp cornstarch * 3 tbsp water or chicken stock Method 1. Toss chicken with all seasonings (except lime juice) and a little olive oil. Marinate for at least 30 minutes. 2. Heat a large pan over high heat. Add olive oil and cook chicken until browned and cooked through. 3. Add onion and peppers; cook until lightly charred. 4. Stir in garlic for 30 seconds, then add spring onions, chilli, and sweetcorn. 5. Mix cornstarch with water or stock and pour into the pan. Cook for 1–2 minutes until lightly thickened. 6. Stir in the cheese, remove from the heat, then add lime juice. Cheese * ½ cup cheddar, grated * ½ cup mozzarella, grated Assembly & Cooking 1. Heat a dry pan over medium-high heat. 2. Roll dough into balls, then into 20cm circles. 3. On one half of each flatbread, layer:     * a little cheese     * chicken filling     * more cheese 4. Fold over and press the edges lightly. 5. Cook for 1–2 minutes per side until golden and crisp. To Finish * Chopped coriander (cilantro) * Squeeze of lime juice * Optional sour cream or garlic yogurt drizzle
