Protein Pesto Shrimp Pasta 🍤🌿 For the Shrimp:
• 1 lb shrimp, peeled + deveined
• Garlic powder
• Onion powder
• Smoked paprika
• Italian seasoning
• Salt + pepper For the Pesto:
• 2 cups packed basil
• 1/4 cup toasted pine nuts
• 2 garlic cloves
• 1/3 cup grated parmesan
• 1/4 cup olive oil

• 1–2 tbsp water
• 1 pint cherry tomatoes

• Fresh parmesan, for serving Instructions: 1. Season shrimp with garlic powder, onion powder, smoked paprika, Italian seasoning, salt + pepper. 2. Toast pine nuts in a dry skillet for 2–3 mins until golden. 3. Blend basil, pine nuts, garlic, parmesan, olive oil, lemon juice, salt + pepper into pesto. Reserve 1–2 spoonfuls. 4. Blend cottage cheese + water until smooth. Add most of the pesto and blend again. 5. Roast cherry tomatoes at 425°F for 10–12 mins until blistered. 6. Cook pasta according to package directions, reserving 1/2 cup pasta water. 7. Cook shrimp and set aside. 8. Add pasta back to the pan and stir in cottage cheese pesto sauce, reserved pesto, and a splash of pasta water until creamy. Add more pasta water as needed. I ended up adding extra pesto because I wanted more pesto flavor, so don’t be afraid to adjust it to your taste 🫶 9. Fold in some shrimp and save the rest for serving. 10.
