Grapefruit marinaded chicken: 6 guajillo peppers 4 chile de arbol 4-6 leg quarters 8 cloves garlic, smashed 8 cups grapefruit juice 2 tablespoons salt 2 cups water Tex Mex seasoning (@hardcorecarnivore) 1. Toast the chilies in a dry skillet until fragrant, then remove and discard seeds and stems. Place into a bowl and cover with boiling water. Let soften 10 minutes. 2. Place the chicken into a deep container, and add the garlic, grapefruit juice & salt. 3. Put the softened chiles in a blender along with 1/2 cup of the soaking water. Blend until smooth, then add to the chicken marinade. Stir well, then place into the fridge for 4-6 hours. 4. Light a grill for medium two-zone cooking, coals to one side. 5. Remove the chicken and discard the brine, then season well with Tex Mex. 6. Grill the chicken over direct heat for 5-7 minutes, flipping every few minutes to avoid burning. Then move it to the indirect heat side, close the lid and cook until internal temp measures 165f.
