Stir in 3 tablespoons of sugar and 1/2 teaspoon of salt until combined. Gradually sift in 1 cup of all-purpose flour, mixing continuously until the dough comes together into a smooth paste. Transfer the dough to a mixing bowl and let it cool slightly before adding the eggs and vanilla extract. Mix until the dough becomes smooth and fully incorporated. Transfer the churro dough to a piping bag fitted with a star tip. Heat neutral cooking oil to 350°F, then carefully pipe 2-inch pieces of dough directly into the hot oil, cutting the ends as you go.
