@hopecrosby_eatss: Fajita steak loaded sweet potato nachos Ingredients: 2 rump steaks - mine were from @aldiuk 4 sweet potatoes - seasoned with 1 tbsp fajita & 1 tbsp chicken seasoning 1/2 sachet fajita seasoning 20g reduced fat cheddar 20g grated Mozarella 1 onion 1 pepper 8 tomatoes 1/4 red onion 4 tbsp guacamole 4 tbsp light crème fraiche Drizzle of honey Chilli flakes & fresh parsley to finish Method: - Cut the sweet potatoes into circles and add to a baking tray. Drizzle over oil and the seasoning then cook in a preheated oven for 35 minutes on 190. - Slice the onion and pepper and add to an oiled pan, leave to caramelise and sprinkle over half the fajita seasoning. Stir and leave on a medium heat for 20 minutes until completely soft. - Season the steak with salt & pepper, then coat in the rest of the fajita seasoning. Cook in an oiled pan however you preferred your steak cooking - mine is medium rare. Once cooked leave to rest for at least 10 minutes. - Chop the tomatoes into small chunks, and add with the finely chopped red onion - add a drizzle of olive oil and a squeeze of lime. - Prepare the guacamole. - Once the sweet potato is cooked, sprinkle over the cheese and add back into the oven for 10 minutes until the cheese is golden. - Layer on the onion, pepper, steak and all the toppings. #dinnerideas #dinnerinspo #mealideas #mealinspo #steak
