The more salt you have, the more you need. This can become a problem for chefs. You become immune to it, and you actually can end up needing it for food to taste of anything. If you can, you wean yourself off salt for 3-4 months and your taste ability resets.

Let's add some unspoken context: 1- They're using Diamond Crystal Kosher Salt, which is *half* as salty as table salt (and doesn't have a metallic taste!) 2- Most of the salt goes down the drain with the water -- to get *any* salt into the pasta (or into a boiled veggie, it's the same principle) there has to be a lot of salt in the water. 3- That's a professional sized pot - it holds more water, salt, and pasta than any pot I own. I appreciate the video asking the chefs, but for it to be useful we need to acknowledge that unless we're using the same size of pot and type of salt, their answer doesn't say much about how home cooks should salt things, other than that pasta takes more salt than we tend to think.
