This easy shrimp salad comes together in just 15 minutes and tastes like summer in a bowl. INGREDIENTS Shrimp: 1/2 lb shrimp, peeled 1/2 tbsp extra virgin olive oil 1 tsp smoked paprika 1/2 tsp garlic powder Salt and black pepper, to taste Pinch of red pepper flakes (optional) Mango Salad: 1 ripe mango, diced 1/2 avocado, diced 1/4 cup green bell pepper, diced 2-3 tbsp shallot or red onion, finely chopped 2 tbsp fresh cilantro, chopped 1/2 tbsp olive oil Juice of 1 lime Pinch of salt INSTRUCTIONS Cook the shrimp - Toss shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Cook in a skillet over medium-high heat for 2–3 minutes, or until pink and cooked through. Make the salad - In a bowl, combine mango, avocado, bell pepper, shallot, cilantro, olive oil, lime juice, and a pinch of salt.
