Whipped Pesto Ricotta recipe below 👇🏻 INGREDIENTS: - 16oz Whole Milk Ricotta - 2 tbsp fresh lemon juice - 2 tbsp heavy whipping cream or whole milk - 1/2 shallot, caramelized - 3-4 tbsp pesto (I’m using fresh store bought pesto) - 1 tsp salt - 1 tsp pepper INSTRUCTIONS: 1. combine ricotta, lemon juice, and cream in a food processor (or container if you’re using an immersion blender like me). blend until smooth. 2. add caramelized shallots, pesto, salt and pepper, and stir until combined.
