Making Kimchi Jjigae for the first time 😋 ⚫️INGREDIENTS: *100g pork rashers, cut into bite-sized pieces *25g kimchi *1 tbsp oil *1/2 yellow onion, sliced *1 garlic clove, minced *1 green onion/scallion, sliced *8 slices tofu *1/2 bunch enoki mushrooms *400ml unsalted chicken stock 🔴SAUCE *13g / 2 tsp gochujang *4g / 3/4 tsp soy sauce *2g / 1 tsp coarse gochugaru *2g / 1/2 tsp sesame oil *3g / 3/4 tsp sugar 🔵METHOD 1. Slice the onion, garlic, enoki, tofu and green onion, then set aside. 2. Cut the pork rashers into bite-sized pieces. 3. In a small bowl, combine all sauce ingredients and mix well. 4. Heat oil in a stone pot or small pot, then add the pork. 5. Cook until the pork starts to colour, then add the onion and green onion. 6. Add the kimchi and cook until fragrant. 7. Add in the sauce and mix well 8. Pour in the chicken stock, add the garlic, then cover and simmer for 8 minutes. 9.Add the tofu slices and enoki mushrooms, cover again and cook for another 3 minutes. 10.
