Tofu Smashburgers 🍔 a burger, that will leave you truly satisfied - vegan or not. ⠀ Smashed tofu patties, topped with cheese and caramelized onions, served on a buttery soft brioche bun with a good classic burger sauce. All served with crispy shoestring fries and a beverage of your choice. I’m promising you, everyone will enjoy this burger! ⠀ RECIPE (3 double burgers) Tofu patties: - 400 g firm tofu - 2 tbsp mushroom powder (optional) - 1 small onion - small bunch parsley - 1 garlic clove - 1 tsp smoked paprika - 1/2 tsp coriander - 2 tbsp soy sauce - 2 tbsp tomato paste - rosemary/thyme - 4-6 tbsp flour (or breadcrumbs) ⠀ Burger sauce: - 6 tbsp vegan mayo - 3 tbsp ketchup - 2 tsp mustard - 2 tbsp pickles, finely diced  ⠀ Shoestring fries: - starchy potatoes - oil for frying - salt Toppings: - lettuce (optional) - Tomatoes (optional) - caramelized onions ⠀ ❶ Finely crumble the tofu, then mix with remaining ingredients and add flour or breadcrumbs as binder until it can be pressed into balls. ❷ Press into balls, then set aside. ❸ Peel potatoes and cut into thin strips using a mandolin. Place in a bowl with cold water to rinse of excess starch, then place on a kitchen towel to pat-dry. ❹ Fry in hot oil at 170°C until they start to brown, then place on a wire rack to let excess oil drip off. Place in a bowl, then season with salt. ❺ Prepare the burger sauce. ❻ Thinly slice 1-2 onions, then cook in a pan, with a bit of salt until caramelized. Deglaze with a splash of water when necessary. ❼ In a hot pan, smash the balls into thin patties. Optionally top with vegan cheese. ❽ Toast your buns, then build the burgers.
