Reserve pasta water, drain. 3️⃣ Melt butter over medium heat. Whisk in flour and cook 1–2 min. 4️⃣ Slowly whisk in evaporated milk, then heavy cream a little at a time until smooth and silky. Simmer 3–4 min until it coats a spoon. 5️⃣ Stir in salt, pepper, paprika, nutmeg, Dijon & Worcestershire. Lower heat. 6️⃣ Add cheeses in batches, stirring just until melted. Loosen with pasta water if needed. 7️⃣ Fold in pasta, then gently fold in lobster. 8️⃣ Transfer to baking dish, top with extra cheese/parmesan if you want.
