So, I admit, I bought this set. I had a lansky set but the wire rods constantly twisted and worried me that I’d cut myself every time. I just got this set and sharpened 1 large chefs knife, a small chefs knife and a deboning knife. While the instructions were a little vague, I have to admit it was faster than my previous sharpening system and I went all the way up to 3000 in half the time my other system took. I’m definitely a fan. I compared the sharpness to the 2 medium chef knives I did the day prior to getting this system and there is definitely a difference. Now, I did all dry, and I don’t know if the 3k & 6k require wet either oil or water which is why the instructions could use some updates…but I like the system so far.
