Structural engineer, PE, here, I hope you’re talking about adding fiber reinforcing to the concrete (if you are, ignore the rest of my comment) do not undermine you walls before underpinning, also, high slump is your friend when pouring walls the way you are when you’re trying to get the concrete to flow into your forms. Pouring super low slump to try and get a higher f’c is actually hurting you b/c the concrete isn’t consolidating properly. In this condition you want high slump and higher flow concrete and vibrate/consolidate the concrete properly
