if you use a mixer with a bread hook, do you use the mixer until it's time to prove the dough please?

Oddly I’ve realized that the less “aggressive” I am with kneading, the softer the dough gets 😂 it really is a learning process!! Thank you so much for this video, it’s really helpful!

Not sure for regular bread dough but when I worked as a pizza chef we put oil on our hands for kneading
