For wiring fella.. use conduits throughout. You can rivet them in place. Which will allow you to just feed cable through with easy.. so any issues at any point, or upgrades or more fittings, you add or remove cabling with ease. Plus it adds protection to the cables as the vehicle will vibrate a lot, so no chance of cable sleeves wearing through exposing the wire.

Biggest advice I can give you if you like In Ireland or the uk, you spend time in it because of the weather so make sure you have comfortable lounging space
