@moz.ico: Nduja Carbonara 🇮🇹🍝 One of the easiest and quickest pasta dishes you can make, only takes the time it takes that pasta to cook. You don’t need the boujee ingredients, so just swap out the guanciale and pecorino for pancetta and parmesan if you don’t have them. THE INGREDIENTS: * 50g Guanciale (or Pancetta) per portion * 2 egg yolks per 2 portions * Pasta * Lots of freshly cracked black pepper * 40g Pecorino (or Parmesan) per portion * 1 ladle of pasta water. * 1 Tbsp nduja METHOD: 1. Chop your guanciale into equal sizes and add to a cold pan with a small amount of oil to render the fat. 2. Add your pasta to boiling water. 3. Combine your grated cheese, egg yolks and pepper and mix. 4. Once the guanciale is browned, add a spoonful of nduja and simmer for a couple of minutes. Add a ladle of pasta water and reduce slightly. 5. Add in your cooked pasta along with your cheese & egg mixture and loosen with some more pasta water if required. 6.
