All you need is: Lump Charcoal a Charcoal Grill 1-2 Tri-tips a light Salt, Pepper, and Garlic Powder rub Start by lighting some charcoal while you trim the Tri-Tip, but make sure its a clean burning Lump charcoal for this! Remove the Tri-tip from the package and carefully trim off any excess fat or silver skin using a very sharp knife. Then season on all sides with a Salt, Pepper, and Garlic powder rub. Once the charcoal is fully lit, dump it in the grill and move it off to the side to build a small fire. If you dont have a grill with grates that can raise/lower, just use a standard 2-zone cooking method to reverse sear! Flip the Tri-tip when its around 80 F internal, then remove when it reaches and internal temperature of 115 F or so. Let it rest for 20 minutes. Make sure you have enough coals fully lit and ashed over. Then after resting, drop the steak directly in the coals and let it sear for 60-90 seconds per side.
