Sri Lankan Southern Crab Sambal! This simple crab sambal is widely enjoyed along the southern coast of Sri Lanka. It is fresh, vibrant and full of flavour. This recipe is a part of a series in which @thisisnotahotelsl is trying to empower women from Mawella area to build confidence in the kitchen, share their knowledge and even host small meals or cooking gatherings with guests. Ingredients 1 kilogram fresh crab 10 to 15 small Asian shallots 2 to 3 green chillies 1 medium tomato ½ teaspoon black pepper, or slightly less according to taste Salt to taste Juice of 1½ limes 1 teaspoon chilli flakes Method Bring a large pot of water to a strong boil. Add the crabs and cook them for about 20 to 25 minutes until they are fully cooked. Remove the crabs from the water and allow them to cool slightly. Carefully crack the shells and remove all the meat. Set the crab meat aside in a bowl. Peel the shallots and slice them very thinly. Cut the green chillies into thin pieces and cut the tomato into small cubes. Place the sliced shallots, green chillies and tomato in a mixing bowl. Add the salt, black pepper, lime juice and chilli flakes. Mix everything together well so the flavours combine. Add the crab meat to the bowl and gently mix until the crab is evenly coated with the sambal mixture. Taste and adjust the salt or lime if needed.
