@thehealthyhophead: Chickpea Salad ✨ It’s been sooooo hot in NYC lately so that means no cooking on the stove! Nearly 80% of my lunches & dinners are these type of salads & honestly my stomach couldn’t be happier! Feel free to add more seasonings/olive oil/lemon juice to liking! (Recipe below!) Recipe: Ingredients- 3 tbsp extra virgin olive oil Juice from 1/2 a lemon 2 tbsp chopped parsley or cilantro 1/2 - 1 tbsp Italian herbs Chili pepper flakes to liking Salt/pepper to liking 1 cup halved grape tomatoes 1 cup chickpeas 1 cup sliced cucumber 1/2 cup sliced red onion 1/2 an avocado, cubed 1/3 cup feta, crumbled Directions- 1. To a bowl, add the olive oil & seasonings listed above. Mix until well combined. 2. Then add the tomatoes, cucumber, chickpeas, red onion, & avocado. Mix again until evenly distributed. 3. Enjoy with lime tortilla chips! #food #foodtiktok
