Growing up, one of my favorite summer dishes - right alongside my dad’s salt & vinegar chicken - was his creamy cucumber salad. It was tangy, crunchy, cool, and incredibly refreshing on those long, humid nights. Years later, when the craving hit, I asked him for the recipe. He told me he didn’t use one; he simply thinly sliced cucumbers and white onions, then mixed them with sour cream, white vinegar to thin it, and salt and pepper. Using his ingredient list as a base, I set out to recreate the salad with my own twist: Spicy Cucumber Salad with Pickled Red Onions! I slice hothouse cucumbers paper-thin on a mandolin, salt and drain them for an hour, then squeeze out the excess moisture. For extra flavor and color, I swap in pickled red onions (a favorite topper), add red pepper flakes and cayenne for heat, and mix everything with sour cream, some of the pickling vinegar, salt, and pepper. It’s delicious right away, but even better chilled. The result isn’t fiery - the cool, creamy ingredients temper the heat - but rather a pleasant, back-of-the-tongue warmth.
