@thisisdulan: You've been adding spices at the wrong time your entire life. Here's the science! Spice flavour compounds are fat-soluble — not water-soluble. That means they can only fully release when they hit hot fat. Add them to water or a sauce and those compounds stay locked inside the spice. You're cooking with the shell of the flavour, not the flavour itself. The correct sequence: hot fat → whole spices → aromatics → ground spices (15 seconds max) → wet ingredients. Now you know why. In Trinidad🇹🇹 we call that "bounjaying" the curry. I guess it comes from the hindi word bhūnjnā (meaning "to parch, fry, or roast"). Most of us were never taught the science behind it, but the older folks insisted it must be done this way.

I agree, I cooked a lovely curry today, and I was amazed, it's all in the beginning stages, I also marinated my meat in yogurt and masala, and at the end about 15 minutes towards the end some good coconut milk.
