IMO, phin filter taste better. There’s something magical about slowing down and watching it drip. But i understand running a business you cannot do this. There’s a couple cafe shops in Japan that specialize in different extraction methods, and watching the barista make your coffee feels more personal and intimate

@vibeancafe what if the lid went under the metal coffee holder, or a lid over the mesh plate Just to give a longer time of full saturation, so it is not dripping immediately.
