@saltysprig: BEST EVER COFFEE CAKE (9x13 pan) Cinnamon Filling * 1 cup brown sugar * 1 1/2 tablespoons cinnamon * 2 tablespoons flour Crumb Topping * 2 cups flour * 1 1/4 cups brown sugar * 2 teaspoons cinnamon * 1/2 teaspoon salt * 12 tablespoons melted butter * Optional: 1/2 cup chopped pecans Cake * 3 cups flour * 2 teaspoons baking powder * 1 teaspoon baking soda * 1 teaspoon salt * 1 cup unsalted butter, softened * 1 1/2 cups sugar * 4 eggs * 2 teaspoons vanilla * 1 1/4 cups sour cream * 1/2 cup whole milk Instructions 1. Prep Preheat oven to 350°F. Grease a 9x13 baking dish or line with parchment. 2. Make the cinnamon filling Mix together: * brown sugar * cinnamon * flour Set aside. 3. Make the crumb topping In a bowl combine: * flour * brown sugar * cinnamon * salt Pour in melted butter and mix with a fork until thick crumbs form. You want: * some small crumbs * some BIG chunks Stick it in the fridge while making the batter. This helps create those bakery-style chunks. 4. Make the cake batter Whisk together: * flour * baking powder * baking soda * salt In another bowl cream: * butter * sugar Beat for 3-4 minutes until light and fluffy. Add eggs one at a time. Mix in vanilla. Add dry ingredients in 3 additions alternating with: * sour cream * milk Mix JUST until combined. Do not overmix. 5. Assemble Spread half the batter into the pan. Sprinkle all of the cinnamon filling evenly over the batter. Carefully spread remaining batter on top. Now absolutely COVER the top with the crumb mixture. Use all of it. It’ll seem like a lot. Good. 6. Bake Bake at 350°F for 42-50 minutes. Tent loosely with foil toward the end if the crumbs get too dark. It’s done when: * center is set * toothpick comes out with moist crumbs but no wet batter 7. Love love loveee coffee cake! I also will sub granulated sugar for brown sugar in the topping, add zest from one lemon to the filling and some blueberries!!! For a different version
