RECIPE Southern Souse Meat (Pig Feet + Head Cheese) 🧂 Ingredients 3–4 lbs pig feet (cleaned and split) 1–1.5 lbs deli-sliced head cheese (cubed) 1 large onion, chopped 4–5 cloves garlic, minced 1 red pepper and green bell pepper( diced ) 3 Stalks of celery (chopped) 2–3 cups white vinegar (adjust to taste) 6–8 cups chicken broth or water (for added flavor) 2 tbsp pickling spice 1 tbsp black pepper 1–2 tsp crushed red pepper flakes (optional, for heat) 2 tsp salt (adjust later) 1 tbsp sugar (balances the vinegar) 1–2 bay leaves 1 tsp smoked paprika (optional but good) 1 tsp onion powder 1 tsp garlic powder 2 tsp oregano  2 tsp thyme  Few dashes of hot sauce (really bring out flavor) Optional: dill pickle relish ( recommended ) 🔥 Instructions 1. Slow Cook for Gelatin In a large pot, add pig feet, onion, garlic, bay leaves, pickling spice and onion powder, garlic powder paprika, salt, crushed red pepper, black pepper, oregano, thyme, vinegar, hot sauce and dill relish Cover with 6–8 cups  chicken broth or water Bring to a boil, then reduce to a simmer. Cook 2.5 to 3 hours, until meat is tender and falling off the bone. 3. Pick the Meat Remove pig feet and let cool slightly. Pull all meat, skin, and soft tissue off the bones. Chop into small pieces (this is where the texture comes from). 4. Build the Flavor Repeat all seasoning to taste  Vinegar (to taste) Black pepper Red pepper flakes Salt Sugar Paprika, onion powder, garlic powder Oregano, thyme Hot sauce and dill relish (to taste) Taste the broth—it should be tangy, slightly spicy, and well-seasoned. 5. Add Head Cheese Stir in chopped deli head cheese. Add the picked pig feet meat back into the pot. Simmer for another 5–10 minutes so everything blends. 6.
