Even traditional matcha is served with a sweet Japanese pastry to balance the bitterness. I like to add a little something sweet to my matcha lattes. Two, You don’t need a scale and weigh your matcha. I’ve never seen a matcha ceremony where they’re pulling out a digital scale. It’s fine to use a teaspoon or measuring spoons to get a basic ratio when starting out, but no need to weigh it down to the gram. Three, no one can match the mastery of matcha like Japan.
