This will be a wet soggy mess if you don’t squeeze the excess water out of the zucchini - which you failed to mention but must have done. This is not a new or even unique recipe - I’ve been making it for years and I know exactly what happens if you leave out the most important step. (I literally had this exact recipe stuck on my fridge for years because I made them so often.)

I do basically the same but I dry the shredded zuch with paper towels, then flatten it on a cookie sheet as a pizza crust 🤌🏻
