@theventuringhomestead: Sourdough loaf baked in a roasting pan! So while I do love my enamel on steel dutch ovens, and the double loaf pan method, using a roasting pan works just as good as a Dutch oven! It’s a cheap and effective way to make a successful loaf and another plus side to using a roasting pan is you can bake really big loaves, or several small ones (like bread bowls). I have chronic neck pain. When I first started my sourdough journey it was killing me to use the Dutch oven. The in and out of the oven was so painful. I saw someone somewhere use a roaster. I haven’t used my Dutch oven since. And my family likes the bread better than in the DO. Probably because, like you, they ( and I ) like a softer crust especially on the bottom. The roaster definitely achieves that. I’ve never used rice on bottom. Gonna give that a try. You aren’t using a cookie sheet under it right ?

what size was that specific roasting pan? I want to buy one just as another option but the 18 inch at Walmart seems so big, and its the only option there. I found one on Amazon thats 13 14 or 15 . Just wasn't sure on size

With that pan you don’t need the rice on the bottom. This is the only way I bake my bread and they are perfect on the bottom without adding rice. My bottoms come out just like yours did just by putting it the pan. The pan has built in trivet that allows air to move below the bread and keeping it from burning
