Determine how much of that tomato goes into a specific recipe. Create a recipe costing sheet Example: Rice = ₦7,000 Tomato = ₦5,000 Pepper = ₦2,000 Oil = ₦1,500 Butter = ₦500 White pepper = ₦500 Seasoning = ₦2,500 Herbs = ₦1,000 Onion = ₦500 Total recipe cost = about ₦20,000 Know how many portions the recipe produces If that batch serves 25 people: ₦20,000 ÷ 25 = ₦800 food cost per plate Break it down further If one plate contains 3 scoops: ₦800 ÷ 3 = about ₦267 food cost per scoop Food cost is not selling price After calculating food cost, you still need to add: Labour Gas/charcoal/electricity Packaging Transport Rent allocation Desired profit Different foods have different profit margins BBQ fish may have a lower margin.
