@belmussared: Toddler-Friendly Shepherd’s Pie Muffins Meat Layer ⭐️ 1 onion, finely diced ⭐️ 2 celery stalks, finely diced ⭐️ 2 carrots, finely diced ⭐️ 500g beef/lamb mince ⭐️ 1 tbsp olive oil ⭐️ 1 tbsp garlic paste (or 2 garlic cloves, minced) ⭐️ ¼ cup Worcestershire sauce ⭐️ 1 tbsp Italian herbs ⭐️ 1 beef stock cube (or 1 tbsp beef bone broth) ⭐️ 1 tbsp tomato paste ⭐️ 1 x 400g can diced tomatoes ⭐️ Salt and pepper, to taste Potato Layer ⭐️ 3 large potatoes, peeled and chopped ⭐️ 1 tbsp butter ⭐️ Salt and pepper, to taste ⭐️ ¼ cup shredded cheese Method 1. Finely dice the onion, celery and carrots. 2. Heat olive oil in a large frying pan over medium heat. Add the beef mince and cook until browned. 3. Add the onion, celery, carrots, garlic, Worcestershire sauce, Italian herbs, stock cube, tomato paste and diced tomatoes. Season with salt and pepper. 4. Simmer for approximately 10 minutes, or until the liquid has reduced. Set aside to cool. 5. Meanwhile, boil the potatoes until tender. Drain and mash until smooth. 6. Stir through the butter and season with salt and pepper to taste. 7. Lightly grease a muffin tray. Spoon 2–3 tablespoons of the meat mixture into each muffin hole, leaving room for a layer of mashed potato on top. 8. Top each with approximately 1cm of mashed potato and sprinkle with shredded cheese. 9. Bake at 200°C (180°C fan-forced) for 10–15 minutes, or until the tops are golden. 10. Allow to cool completely before removing from the muffin tray. VERY IMPORTANT or they will fall apart! Storage ⭐️ Refrigerate in an airtight container for up to 3 days. ⭐️ Freeze for up to 3 months. ⭐️ Reheat in the microwave, oven or air fryer until warmed through.
