@duongerz: As requested!! Dirty Spaghetti is truly a fridge clean out meal. I had some frozen ground chicken and some smoked andouille sausage and a bunch of Trinity in the freezer so I thought I’d whip this together. I forgot to add it in the video but I also use smoked paprika to season the gravy. I don’t include measurements for the seasoning because I didn’t measure don’t jump me 😒😩. The measurements for the chicken stock and pasta water are also estimates. You want a nice thick consistency that will coat the noodles. The roux is a must without it you won’t get the deep flavor. Fresh parsley will take it to another level adding freshness to the savory rich gravy. And when I say a sprinkle of cheese I really mean just a sprinkle to tie it all together. I also did not use any salt in this recipe the Cajun seasoning (Tony Chacheres) already has a high salt content and so does the smoked sausage. If you use enough seasonings you won’t need any additional salt. I encourage everyone to season to their preference. I hope y’all enjoy this recipe!
