Ingredients * 200g dates * 100g peanuts * 100g pistachios * 100g pumpkin seeds * 100g sunflower seeds * 100g walnuts * 100g sesame seeds * 1 tbsp butter (50g) Coating: * Shredded coconut Directions 1. Melt butter in a pan and add the dates 2. Toast together for 3-4 minutes until the dates soften 3. Add all the nuts and seeds and continue toasting briefly, stirring well 4. Transfer the mixture onto a sheet of parchment paper 5. Using the parchment to protect your hands from the heat, knead and press the mixture together 6. Shape into a log or bars 7. Let rest for 3-4 hours until firm 8. Roll in shredded coconut until fully coated 9. Slice and serve Serves 8-10
