@jakepurvisconsulting: If you've been to Buc-ee's and haven't bought one of these yet... you're missing out. 🔥 Today I smoked one of Buc-ee's bacon wrapped pork tenderloins stuffed with jalapeños and cream cheese, and it did not disappoint. These are usually in the freezer section near the jerky counter and are about as easy as it gets. I smoked it with hickory wood chips until it reached an internal temperature of 160°, then let it rest for about 15 minutes before slicing. The bacon crisped up nicely, the pork stayed juicy, and the jalapeño cream cheese filling added just the right amount of flavor. One thing I love about these is how simple they are. Pull it from the freezer, fire up the smoker, and let it do its thing. While you're there, check out the stuffed chickens and sausage options too. I've had both and they're absolutely worth trying.
